Ingredients

US Cup Measures:
  • 1 1/2 cups (300g) Arborio rice
  • 2 cups (480ml) seafood or chicken broth
  • 1 cup (240ml) dry white wine
  • 1 lb (450g) fresh lobster meat, cooked and chopped
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/4 cup (60g) unsalted butter
  • 1/4 cup (60ml) olive oil
  • 1/4 cup (30g) shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons (30ml) fresh lemon juice
  • 2 tablespoons (30ml) chopped fresh parsley
  • 1 tablespoon (15ml) olive oil (for cooking lobster)
  • 1 tablespoon (15g) unsalted butter (for cooking lobster)
  • 1 teaspoon (5g) grated lemon zest
  • 1 teaspoon (2g) fresh thyme leaves
  • Salt and black pepper to taste

  • 300g Arborio rice
  • 480ml seafood or chicken broth
  • 240ml dry white wine

  • 50g grated Parmesan cheese
  • 60g unsalted butter
  • 60ml olive oil
  • 30g shallots, finely chopped
  • 3 cloves garlic, minced
  • 30ml fresh lemon juice
  • 30ml chopped fresh parsley
  • 15ml olive oil (for cooking lobster)
  • 15g unsalted butter (for cooking lobster)
  • 5g grated lemon zest
  • 2g fresh thyme leaves
  • Salt and black pepper to taste
Lobster Risotto

Instructions

  1. In a large saucepan, heat 1/4 cup of olive oil over medium heat. Sauté the finely chopped shallots until translucent.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Add the Arborio rice to the saucepan and stir to coat it with the oil, shallots, and garlic.
  4. Pour in the dry white wine and let it simmer until the wine is mostly absorbed by the rice.
  5. Gradually add the seafood or chicken broth, one cup at a time, stirring continuously. Allow each addition of broth to be mostly absorbed before adding the next.
  6. Continue cooking and stirring the risotto until the rice becomes creamy and tender, which should take around 18-20 minutes.
  7. In a separate skillet, heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter over medium heat. Cook the lobster meat until it’s heated through and lightly golden.
  8. Stir the cooked lobster meat, heavy cream, grated Parmesan cheese, 1/4 cup of unsalted butter, fresh lemon juice, grated lemon zest, and fresh thyme leaves into the risotto.
