Perfectly Fluffy Scones: A Taste of British Tradition

Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon (15ml) baking powder
  • 1/2 teaspoon (2.5g) salt
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 1/2 cup (120ml) heavy cream
  • 1 large egg
  • 1 teaspoon (5ml) pure vanilla extract

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

  3. Add the cold cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.

  4. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.

  5. Pour the wet ingredients into the flour-butter mixture. Stir until just combined; do not overmix.

  6. Transfer the dough to a floured surface. Gently pat it into a circle about 1-inch (2.5cm) thick.

  7. Using a floured round cutter, cut out scones from the dough. Place them on the prepared baking sheet.

  8. Brush the tops of the scones with a little extra cream for a golden finish.

  9. Bake for 12 to 15 minutes or until the scones are lightly golden on top.

  10. Allow the scones to cool slightly before serving. Serve with clotted cream, jam, and a pot of hot tea.

  • Scones are best enjoyed fresh, but you can store leftovers in an airtight container for up to 2 days.
