Crunchy Almond Biscotti: An Italian Delight

Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 teaspoon (5g) baking powder
  • 1/2 teaspoon (2.5g) baking soda
  • 1/4 teaspoon (1.25g) salt
  • 3 large eggs
  • 1 teaspoon (5ml) pure vanilla extract
  • 1 cup (150g) whole almonds, toasted and coarsely chopped
  • 1/2 cup (85g) dried cranberries or chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.

  3. In a separate bowl, beat the eggs and vanilla extract together until well combined.

  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.

  5. Gently fold in the toasted almonds and dried cranberries or chocolate chips (if using).

  6. Divide the dough into two equal parts. Shape each portion into a log, approximately 12 inches (30cm) long, and place them on the prepared baking sheet.

  7. Bake the logs for 25 minutes or until they are firm and lightly golden.

  8. Remove the logs from the oven and let them cool for 10 minutes. Reduce the oven temperature to 325°F (160°C).

  9. Using a sharp knife, cut the logs diagonally into 1/2-inch (1.25cm) wide slices.

  10. Arrange the biscotti slices cut side down on the baking sheet and bake for an additional 10-15 minutes, or until they become crispy and golden.

  11. Allow the biscotti to cool completely on a wire rack before storing them in an airtight container.

  • For an extra festive touch, you can drizzle melted chocolate over the cooled biscotti.
