Ingredients:
- 1 cup (150g) all-purpose flour
- 1 cup (90g) rolled oats
- 3/4 cup (150g) granulated sugar
- 1/2 cup (45g) desiccated coconut
- 1/2 cup (113g) unsalted butter
- 2 tablespoons (30ml) golden syrup (or honey)
- 1/2 teaspoon (2.5g) baking soda
- 2 tablespoons (30ml) boiling water
Instructions:
Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the all-purpose flour, rolled oats, granulated sugar, and desiccated coconut.
In a saucepan, melt the unsalted butter and golden syrup over low heat until well combined.
In a small bowl, mix the baking soda with boiling water and add it to the melted butter mixture. Stir to combine.
Pour the liquid mixture into the dry ingredients. Stir until everything is well coated and forms a dough.
Take spoonfuls of the dough and roll them into balls. Place the balls on the prepared baking sheet, leaving enough space between each one.
Flatten the balls slightly with the back of a fork.
Bake the biscuits for 15-18 minutes or until they turn golden brown.
Remove the biscuits from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
